Microsoft Office v. X, Service Release 1. 1000 bug fixes, still no Exchange integration. (Microsoft is still trying to decide how it wants to tackle that issue.

Also, Macintouch, MacFixit, and others are reporting that installing the service pack will wipe out your registration information and force you to dig up your original install CD and re-enter the CD key, which apparently doesn’t always work. And if you upgraded from Office 2001, you’ll have to dig up that CD, too. Lovely.
